cleaning off the cobwebs

Let's do this!  Years have gone by  ~ I am dusting off our blog.  We are always told we have great adventures, great stories - so we need to start sharing them with the world ~ as if Facebook isn't enough.  HA!

Being the month of November, everyone says it is the month to give thanks.  Really?  Why wait till November to give thanks?  sheesh.  How about this to get you practicing gratitude:

Sec­ond, this is not hard to achieve — a few hours writ­ing a grat­i­tude jour­nal over 3 weeks can cre­ate an effect that lasts 6 months if not more. And remember, gratitude is a practice, not a perfect.  So please don't beat yourself up if a week has gone by and you were whisked away by that thing called life and forgot to count your blessings.  It takes practice, time and patience.  But oh so worth it.

I currently have laryngitis, so perhaps that fun fact inspired this blog to get up and running again.  I have to talk and express myself SOMEHOW.  

Some of the latest about our life:
--we are LOVING this new snow!
--we are BUSY, but still make time to snuggle and have hot drinks (I love hot drinks - tea, coffee, hot chocolate).... that reminds me, I really want a new espresso machine for the Christmas (ah hem). 
--I am beginning my 300 hour yoga teacher training this week - eeek!  and have an amazing yoga trip to Tulum planned next month along with some FABULOUS ladies!
--I have a new website:   www.mcameronyoga.com
--Chris is currently on his third meal of the day and it is 10am.  For those of you who know Chris, that should have made you laugh!  :)
--I am having this creative urge to cook more and more PALEO!  We will see how that goes....

We also just booked a trip to Nicaragua.  Man - life is ROUGH!  We are digging deep and finding some pretty fun places to stay, surf, do yoga, shop at local artsist markets, eat fish tacos and surf on active volcanoes!  

Here are two of my favorite recipes I have stumbled upon:

Roasted root vegetables!  Whenever you are feeling a bit scatter-brained, eat ROOT veggies, as they will ground you.  I swear - try it!

I used:  rainbow carrots, sweet potatoes, onions, beets, garlic and sprinkled basil on top.  All veggies are brushed lightly with olive oil.



And this morning - paleo pancakes.  2 ingredients!  Are you all saying:  GET OUT OF TOWN?!?!
1 banana.  1 egg.  Makes 4.  Ta-dah!







Thanksgiving is right around the corner too.  These are some ideas up my sleeves (p.s.... I LOVE to cook):

Butternut Squash Risotto
Cinnamon Apples
Delicata Squash Rings
Sweet Potato Fries
Chewy Pecan Pie Brittle
Coconut Chocolate Brownies

If you know me well, you know I LOVE my sweets.  My local Crossfit gym has really sparked my curiosity for a paleo diet.  I am already gluten free, so not sure I really want to be a bigger pain in the ass than I already am.  But some paleo recipes look DELISH.  Oh, and I really DON'T need to lose any more weight.  Having to buy children's clothing sometimes isn't a GOOD thing (it's actually a really frustrating thing).

Gratitude...such a great thing to write about and encourage. Here are a few to get me started...
1. i am thankful for weather that allows us to use our fire place (i won't tell you the temperature, but for us, a fire was necessary today)
2. i am thankful for the cute old couple I ran into today that just moved back to winter in tucson.
3. i am thankful my mom visits us so much.
